I live in London and doing mostly media work like composing, sound design and audio post. Was thinking to shift to food industry for long time. One of my friend thinking tune in with £30k and i have a real estate in Turkey which will be around £100k.

So the real estate money won’t come so soon but my friends input is available atm.

My initial plan was renting a small place where has only one or max 2 table. As i don’t want to spend to much for extra stuff. I will be in the kitchen btw.

But with this money situation, we are considering ghost kitchen with 3-4 kitchen ideas(burger-pasta-sandwich-chicken).

The thing is I’m trying to wrap my head around the financials. Delivery apps will get %30, VAT will be %20, and the rest is for expenses, rent and profit. So I know the margins will be tight and but just wondering any does any of you have experience with ghost kitchens? Any relevant info and experience also appreciated!
