I enjoy making homemade pizzas and recall having pizza at many restaurants (mostly in Deutschland) where the cheese was much stronger flavored than mozzarella. Not quite as strong as the Hessen Handkaese, but sometimes close.
Can anyone recommend cheeses to try that would melt nicely on a pizza? Thank you
