In France, the Larousse and the Robert are the two most famous ones. The former is more encyclopedic and the latter focuses more on the definitions. Their bestsellers are Le petit Larousse and Le petit Robert.
The main organization "overseeing" the French language is L'académie Française (French academy). They can be pretty controversial because their effort of "Frenchizing" the language are often a bit farfetched like finding literal translations to well established anglicisms. Some fellow french could explain it better than me 🙂
