Do you guys have ice cream sandwiches? What are some classic ice cream items people still love?

I mean with the classic soft brown cookie. They’ve never gone out of style here. You can always make your own pretty easy but they’re not the same, they melt fast. Any classic to each country? Wiki says Ireland made one with a wafer.
